Cyndi O’Meara is a nutritionist, film maker – ‘What’s With Wheat?’, best-selling author, international speaker and founder of Changing Habits. Cyndi graduated with a BSc majoring in Nutrition in 1984, her special interest was ancestral foods. After graduating, she became disillusioned by the global ‘standard’ nutritional guidelines that she paved her own path. Cyndi started Changing Habits in 1990, from her regular newspaper column on nutrition. Her ground breaking book Changing Habits Changing Lives (1998) became an instant best seller and from there she has grown a successful organic food company, certified online education program, a ground breaking documentary and is currently building a 60-acre organic food bowl which will be used as an education centre for sustainable farming practices. For cancers of the mouth, esophagus and pharynx, there was a 22.7% increased relative risk. For lymphoma, there was a 77.8% increased relative risk. Other research studies have shown that those with celiac disease who fail to comply to gluten free dietary restrictions have an increased risk for cancers of the intestine, colon, rectum, esophagus, thyroid, pancreas, skin, liver, and stomach. Aside from the studies that show a direct increase in cancer development, eating gluten (and grains) can also contribute to many cancer risk factors. So let’s take a closer look at all the possible connections. Maybe you’ve given up grains, but your symptoms still persist? Or maybe you’ve started experiencing new symptoms? If your answer is “yes,” then I suggest learning more about oxalates. Because for some, a gluten-free or grain-free diet isn’t enough. Oxalates are natural compounds found in both plants and humans. Plants use vitamin C to make oxalic acid, which can bind with calcium to form calcium oxalate crystals. Scientists believe these crystals help protect plants from calcium excess, insects, and infections as well as provide structure. As humans, we get oxalates from eating plants that make them. Our bodies produce them under certain circumstances as metabolic by-products. And yeast and fungal infections can also contribute to the production oxalates. However, in humans, oxalic acid and oxalate crystals are not beneficial. For perspective, oxalic acid is capable of removing rust from metal and is used commercially for this purpose. Anti-freeze (a.k.a. ethylene glycol) gets converted to oxalate in humans, which is why it’s toxic if consumed. Then, see if your symptoms subside over time. The goal is to get down to approximately 40 – 60 mg of oxalates per day. However, it’s important to reduce your intake slowly. Because a drastic drop can be dangerous, which is why I always recommend working with a professional. On a low oxalate diet, it’s also important to drink plenty of water to help eliminate oxalates through your urine. If you decide to try a low oxalate diet, you’ll want to start by slowly eliminating certain foods. Part of this connection has to do with the role gluten plays in causing intestinal permeability (Leaky Gut). This process was discovered originally by Dr. Fasano. The part less talked about has to do with gluten’s impact on the microbiome (good bacteria in the gut). Studies have shown that gluten can alter the normal bacterial flora, and in doing so set the stage for decreased levels of regulatory gut bacteria, and increased levels of bacteria that contribute to inflammation. When you combine leaky gut with altered bacteria, you get an increased presence of bacteria and their by products in the blood. One type of bacterial byproduct is LPS (lipopolysaccharide). Studies have shown that when this happens, the immune system will produce inflammation trying to combat the presence of these translocated bacteria. This increase inflammation has been shown to alter the function of the brain (Leaky Brain), and a side effect of this is DEPRESSION. First, when you eat more calories than your body can burn at any given time, the excess energy is stored as fat. And many people frequently eat excess calories from high carbohydrate, grain-based foods, such as pasta, bread, cereal, cookies, crackers, and so on. Second, eating a high carbohydrate diet can raise your blood sugar and your insulin. Over time, these abnormalities can lead to weight gain, insulin resistance, obesity, and type 2 diabetes. As I mentioned earlier, weight gain and obesity can put more pressure on your joints and cause more wear and tear than normal. These things can cause pain. And pain can prevent you from exercising, which can cause you to gain more weight and experience more pain. Studies have found that pain is a common complaint among obese adults, adolescents, and children. For instance, it’s been reported that obese patients are 4 times more likely to experience pain than normal-weight individuals. Similarly, those with pain disorders are commonly overweight or obese. For example, a study found that 60% of female patients with fibromyalgia were overweight and over 30% were obese. Obesity is also associated with the development and severity of osteoarthritis. And the CDC lists obesity as a risk factor for rheumatoid arthritis.
