as for hands on material, by far my favorite thing to recommend is microcorruption. it has you writing exploits for a 16-bit microcontroller, giving you a grand tour through low-level hacker shit, set up perfectly to teach it. the final test is fiendish, and will make you do more work than even feels reasonable, but the feeling of conquest when you beat it is unmatched
