We are hearing so much these days about the benefit of a ketogenic diet. But while there may be benefits, it's not necessarily the easiest diet for everyone to engage. Further, staying in ketosis for an extended period of time may actually be associated with some fairly significant threats to our health. Today I'm speaking with Dr. Steven Gundry about his new book, Unlocking the Keto Code. I have to admit that at first, I thought this was going to be another way of engaging the ketogenic diet. But I soon learned that what this book is actually focused on is first, unraveling why a ketogenic diet is beneficial, and secondly, after the reader understands the importance of the mechanisms underlying the ketogenic diet, it provides them the tools for bringing these mechanisms online without specifically going into ketosis. That certainly sounds like a home run. The book focuses on the notion of "uncoupling mitochondria." This basically means that fuel is wasted as opposed to being utilized. It's a way of actually reducing the efficiency of mitochondrial function to bring about positive health benefits. I know this sounds challenging, and I agree that it is. Nonetheless, Dr. Gundry has done an exceptional job in terms of making this information clear and understandable. I’ve made a lot of smoothies in my time (and expect to see a lot more nutrient-dense smoothie recipes on this channel!), but I don’t think I’ve ever made a smoothie that’s as nutritionally complex and satisfying as this one.    In this video I am going to share a collagen-infused smoothie using ingredients that one wouldn’t normally expect to see in a smoothie, yet one which has incredible rejuvenating effects on the body and more specifically: the skin.   I have traveled to Asia many times over, beginning more than 15 years ago, and during those travels I noticed that Asian women have remarkably youthful and clear skin. I discovered that one of the main staples of their diet is….collagen. This skin and joint-enhancing protein literally is the glue that holds us together and is the foundation for youthful-looking skin. The beautiful women throughout Asia are conscious of the right foods to eat (like bone broth, donkey hide, and duck head) that promote collagen production and take advantage of the skin-enhancing properties certain foods contain.   In today’s fast-paced world, we are always in a hurry, and let’s face it, it’s not always easy to spend time preparing meals using these ingredients. By no means does that mean we shouldn’t, but I have found in my busy schedule as a mom of four children, a wife, and a businesswoman, that it can be challenging. So with that in mind, this collagen infusion smoothie was created.   As I mentioned, this is no ordinary smoothie. With certain diets, one of the most common hurdles is having to give up the “good stuff,” the sweets. It’s not fun. We often turn to guilty eating, and even deprive ourselves of the things we love. So what happens? We either give up treats entirely, which for many leads to burnout, temptation and frustration, or we consume “healthy” artificial alternatives which quite frankly lack in taste and even worse, do our body as much harm as a sugar-laden treat. Well, I’m here to share with you that keto isn’t a fad or even a diet. It has resurfaced as a healthy way of life in recent times, and people are certainly capitalizing on its potential for weight loss; but the ketogenic diet as it is known, or keto lifestyle as I prefer to call it, is by no means new. The principle of healthy fats, and no sugar, goes back a long, long time; and its long-term benefits go far beyond losing weight. The best part of it all, and the subject of today’s video, is that you DON’T have to sacrifice the good stuff. You may have seen my video titled “10 “unhealthy” foods that are in fact good for you” (which you can find below this description), which details some keto-friendly, healthy foods that we have always been told to avoid. But in this video, we’re focusing on one of my all time favorites... ice cream. Keto ice cream, to be more specific. This is a favorite in my household! I love it and my children can’t get enough of it, and the beauty of it all is that it is delicious and so easy to make. It only takes a few simple ingredients (listed below with instructions) and hardly takes any time; you just drop all the goodness in a bowl, whisk it up, place it in the freezer and you’re good to go. It’s really that easy! No need for artificial treats or denying yourself of your favorite foods. It is not about depriving ourselves. It's a wonderful feeling knowing that we can eat good things and that we don't have to sacrifice flavor or the things we love. In fact, it’s quite the opposite; we should and CAN still enjoy wonderful treats with zero guilt, knowing full well that not only do they taste delicious, but they are also extremely good for us! It sounds like an oxymoron, right? Surely no treat that tastes great can be good for us. Most of the time we’re accustomed to “healthy treats” tasting bland, not satisfying our cravings, and just being flat-out unappealing. But that is what I love about the Keto lifestyle, you can have the best of both worlds; able to enjoy all our favorite things, and not going to bed at night wishing we hadn’t. Classic pecan pie is decadent, but it contains more sugar than the body should consume in a week! With this recipe, I sought to capture the taste and essence of traditional pecan pie without all the toxic sugar. This one is a particular favorite of mine, and being able to treat my children (who by the way can’t get enough of this particular recipe), is an added bonus. People far too often associate eating healthily and having a healthy lifestyle with sacrificing taste and fun, and yet, if done correctly, that couldn’t be further from the truth. Living a healthy lifestyle and eating right doesn’t mean being miserable and eating broccoli all day long. It’s not about depriving ourselves. It’s a wonderful feeling knowing that we can eat good things and that we don’t have to sacrifice flavor or the things we love, and even better knowing that our bodies are soaking up all the benefits while we treat our tastebuds. Having a fondness for pecans, I love this recipe, and what I also love is that it’s so quick and easy to make; just healthy, delicious ingredients thrown into a blender and voila! I go into more detail in the video but let’s explore what we’ll be covering in terms of the health benefits that you can expect from this milkshake: First of all it’s full of healthy fats; you’ve got your creamy MCT, coconut milk and nut butter, (and of course, feel free to substitute any healthy nut butter according to what you prefer). You have the added bonus of the rich, buttery pecans, which come with their own set of healthy properties, such as magnesium, monounsaturated and omega-3 fatty acids, as well as B-vitamins, manganese, zinc, and copper, polyphenol antioxidants, oleic acid, phosphorus, vitamin E, and so much more and can help your body fight cancer, promote weight loss, reduce inflammation, reduce the risk of breast cancer, improve your skin, have anti-aging properties, strengthen the immune system, and improve nerve and brain function. Pesto is one of my favorite foods! In fact, it’s foundational to my health and that of my family’s.  I would love for you to think differently about pesto. We often think of herbs as a garnish, but to me herbs are my super-fuel especially super herbs like mint.  Why is mint so incredibly powerful? It’s powerful because it supports our immune system, it’s anti-inflammatory, it’s filled with polyphenols, flavanols, all the antioxidants that build the elastin in our body and our skin. This tiny little plant is filled with all these phytonutrients that are going to help balance blood sugar, give us energy and to top it off, it’s absolutely delicious. I eat it out of the bowl as I would a salad, it’s that good, it’s that tasty, and I know it’s doing wonderful things for my body. Vitamin C is one of the most important nutrients for the keto diet. Some of the best foods to consume for vitamin C are bell peppers, sauerkraut, and a lot of cruciferous vegetables. Omega 3 from wild-caught salmon and fatty fish are also very important. Vitamin B1 from sunflower seeds, non-fortified nutritional yeast. Today’s video offering gives us a nice, healthy approach to an older recipe. This is a twist on the traditional granola recipes I grew up eating in Switzerland and this is something we all enjoy frequently in my household. This was a staple breakfast in my home as a child, and today I love granola as much as I did back then, but I’ve tweaked the recipe somewhat in a way that allows us to substitute the large amounts of carbs that traditionally accompany granola. Instead, adding keto-friendly alternatives like dried mulberries, crushed walnuts and raw pumpkin seeds, as well as shredded coconut, chia seeds, dried strawberries or blueberries (optional) and organic tahini. I’ve also created this recipe to include foods that have extra health benefits such as flax seeds (omega-3 oils), coconut oil and walnuts (healthy fats), cinnamon (anti-inflammatory), collagen, monk fruit, so you don’t have to sacrifice that sweetness, plus some cacao nibs for a little extra flavor, and of course, the healthy properties contained within. This granola boasts a healthy amount of fiber and polyphenols both of which greatly prevent your body from harboring toxins that age us and steal our beauty. This isn’t a complicated recipe, by any means. It’s simply a case of mixing the right ingredients together, laying it out and then baking for a short time, and then the rest is entirely up to you! Eat it by the handful, spoonful, bowlful! Sprinkle it over full-fat yogurt if you want a healthy keto breakfast. The truth is, there are no rules, just enjoy it! To your health and happiness :) -Naomi Ingredients: Serves: 16 servings 1/2 cup organic tahini 1 tablespoon coconut oil, melted 1 1/2 tablespoons monk fruit powder 1 teaspoon Ceylon cinnamon 1/2 cup dried mulberries 1/3 cup crushed dried strawberries or blueberries 1/2 cup crushed raw walnuts 1/3 cup raw pumpkin seeds 1/3 cup shredded unsweetened coconut 2 tablespoons chia seeds 2 tablespoons ground flax seeds 1 tablespoon cacao nibs 2 tablespoons collagen (optional) Directions: Preheat oven to 200 F. Prepare an 8×8 square baking pan with parchment paper and set aside. Mix the tahini, oil, and sweetener in a large mixing bowl. Add the rest of the ingredients to the bowl. With a fork or spatula, stir to combine, about 2 minutes. Transfer the mixture to baking pan and press into all four sides so the mixture is evenly dispersed. Bake for 35 – 55 minutes depending on your oven. Remove from oven and let cool for 30 minutes to 1 hour before crumbling into granola (or cut into squares for a quick on the go snack!). Store leftovers in a glass container in the fridge for up to 5 days. In this video I am going to show you the one of the most simple and delicious keto bread recipes I've ever made. What I love about this recipe is that you can add pretty much anything you like and make it the way you want. You can enjoy your favorite healthy ingredients and satisfy those bread cravings anytime - keto style. The ketogenic recipes are never boring and this is just another treat to add to your list. Spread some good organic butter on there and enjoy! I've always enjoyed a higher fat diet, but had no idea by shifting to a keto lifestyle, how unbelievable I would feel and how finally, refined grains and sugar doesn’t appeal to me (at least most of the time, but I still have a craving every once in a while). Sometimes I get a hankering for that cozy perfume of warm bread permeating from the kitchen throughout the whole house and it inspired this recipe for a delicious bread. This is the kind of bread that doesn’t weigh you down, make you bloated, or give you that groggy feeling 20 minutes later. Instead, the good fats from the almonds, pastured egg yolks, grass-fed ghee, and MCT oil will sustain your energy while also helping you to burn fat. Enjoy! Ingredients: 6 large eggs (ideally from pastured hens), separated 1/4 cup organic, grass-fed butter or ghee, melted 1 tablespoon Simply GOODFATS organic MCT oil, plus extra for coating the pan 1 1/2 cups almond flour 1/4 cup coconut flour 3 teaspoons baking powder (must be aluminum free) 1/4 teaspoon garlic powder (optional) 1 teaspoon dried rosemary (optional) 1 pinch sea salt 1 tablespoon monk fruit sweetener 2 tablespoons chopped olives (optional) Instructions: Preheat oven to 375 degrees Fahrenheit. Separate the egg whites from the yolks. In a food processor blend the egg yolks, half of the egg white mixture, melted butter, and MCT oil until smooth. Pulse in the almond flour, coconut flour, baking powder, garlic (optional), rosemary (optional), salt and monk fruit sweetener until combined. The mixture will be thick. Add the remaining egg whites and olives (optional) and pulse until fully combined. Do not over-mix or bread texture will be tough. Pour mixture into an oiled 8 x 4 loaf pan. Bake for about 30 minutes. Test with a fork to see if the bread is cooked through. Cool on a wire rack for 5 to 10 minutes before slicing.
